Raw, Steam, Roast, Sauté - The Many Ways To Love Vegetables

Eating lots of vegetables seems to be one of the dietary suggestions that most everyone can agree upon. So let’s dive in and learn different techniques for eating these nutrient-rich, low calorie foods. No fancy recipes tonight, instead we’ll blanch broccoli, grate raw beets, sauté greens and roast sweet potatoes. Then we’ll use them in a variety of ways to create simple, practical, tasty vegetable dishes to enjoy everyday.

Join Chef Paige as she prepares five delicious Italian recipes, all accessible and easy enough to make on a weekday. Her menu includes: Spinach Frittata; Wild Mushroom Pizza; Pasta alla Puttanesca (Pasta with capers, olives, tomatoes & hot peppers); Winter Panzanella (Tuscan bread salad); and Panna Cotta (creamy Italian pudding). Learn the basics, and then you can vary and adjust to the season and the ingredients you have on hand.

Eat Well and Be Well in Pregnancy

For those pregnant or planning a pregnancy, Nutrition Coach Karen Duggan will help you listen to your body and your baby during pregnancy. Learn about foods to eat to help prevent morning sickness. Discover simple ways to include more greens and grains in your diet to support you and your baby, with a menu that includes the Best Potato Soup you’ll ever eat, and a simple and delicious Kale Quinoa Salad. We’ll also share healthy treats you can make for good energy in pregnancy.

Vegetarian Sushi

Learn how to make tasty Japanese food without the fish. We’ll start with Vegetable Gyoza (pan fried and steamed dumplings with a savory dipping sauce). Then we’ll learn how to make perfect Sushi Rice and with it we’ll construct a beautiful array of rolls: Umeboshi and Shiso Leaf Nori Rolls; Inside-Out Rolls with Spicy Miso Eggplant and Tofu; Inside-Out Rolls with Asparagus, Omelet, Cream Cheese and Avocado; and Tempura Mushroom-Wasabi Sweet Potato Nori Rolls. A lovely surprise sweet will crown the evening!

Create a Special Valentine’s Day Dinner for (or with) Your Sweetheart

Join Paige for a fun class where she’ll guide you through a meal you can prepare for someone special on Valentine’s Day. Start your meal with Simple Gorgonzola & Goat Cheese Crostini; followed by a Spinach & Mushroom Salad with Creamy Vinaigrette. The main dish will be a fabulous Baked Salmon with Herbed Mustard Breadcrumbs served with Ragoût of Winter Vegetables. Finish your romantic meal perfectly with Provençal Hot Chocolate Creams (a.k.a Molten Chocolate Cake). You’ll be in love with this food!

Enjoy all the flavors of an Italian feast with some traditionally gluten free items and a few gluten substitutions. Hilary will prepare, and you will enjoy, Farinata (a traditional chickpea flat bread) served with Baby Greens; Fresh Minestrone Soup; Risotto with Spring Vegetables; and a sampling of gluten-free pastas. We’ll finish with a freshly baked Macaroon. Bravo!
